Peanut Butter Chocolate Chip Cupcakes with Peanut Butter Frosting

I wasn’t able to update this blog that much since I’ve been juggling two blogs, one my personal blog and this one. Then orders where continuously pouring (thank you, Lord) that I’ve got no time to write.

So I’ve been doing some experiments and decided to try out some new cupcake flavors. I came up with peanut butter. Who doesn’t like peanut butter? Then mixed in with chocolate chips then topped with a peanut butter frosting? Yummy.

I wanted to do more cupcake flavors so there’s a list all piled up. The ones were approved I’m going to sell them soon. So watch out for it. 😉

These cupcakes are now available, just PM me for inquiries, you can also frost these with buttercream, chocolate ganache or cream cheese frosting.

I promise to write more soon. 🙂 But for now I hope you’re satisfied with this entry.

Chocolate Banana Cupcakes

Chocolate Banana Cupcakes with Chocolate Ganache Frosting 2-ways (Glazed and Whipped)

If you’re tired of the regular chocolate cupcakes and you love bananas, here’s my chocolate banana cupcakes.

It’s super moist because of the mashed bananas mixed inside that keeps the moisture inside the cupcakes. Super soft and moist, and the best paired frosting with these are the Chocolate Ganache frosting, you can choose either glazed or whipped. Either or the taste would be perfect. Other frosting available would be Butter cream and Cream Cheese.

Chocolate Ganache – a mixture of cream and chocolate. Bring the cream to a boil, then remove from heat, pour it all over the chopped chocolate, stir until everything is melted.

Cheesecakes

Blueberry Cheesecake 9″

There are three types of cheesecakes I know so far, the traditional baked cheesecake, no-bake cheesecake and Japanese cheesecake.

Traditional Cheesecakes – these are baked in Baine-Marie (water bath). Eggs are the main component that binds the cake together (coagulation of proteins). This is the method that I use for my cheesecakes, it’s richer and creamier.

No-bake Cheesecakes – gelatin is used to bind the ingredients together, placing it in the refrigerator for a few hours will let it the gelatin set. This is a quick method, but I don’t really liked it, there’s a tendency (if you fail to bloom the gelatin well, or lack of gelatin) that the cake can collapse.

Japanese Cheesecake

Japanese Cheesecakes – baking method will be the same as traditional cheesecakes, but there’s meringue added in the batter to make it lighter and fluffier. The taste is different because of the lightness of the cake, but it’s still cheesecake and if you opt for a lighter one this cake will be the best option.

I sell two of these types which is Traditional Cheesecake and Japanese Cheesecake. 9″ and 6″ round cakes are the available sizes.

Cheesecake cuppies are also available in 12’s and 6’s (minimum order of 2 boxes if by 6’s).

Toppings (for traditional cheesecake and cheesecake cuppies only): Blueberry, Strawberry and Cherry.

Message Sugar Cookie

A client of mine requested this kind of design. Good thing I have some edible pens at home. 🙂 This was one of my last creations before I left for Indonesia. Isn’t it a nice thing to give it to your loved ones?

Like message in a bottle, it’s like a message in a cookie.

The Precious Moments Project

Precious Moments themed Fondant Cake

A lot of you may have noticed that I’m not replying that much the past few days. The reason is I was out of the country, I went to Indonesia to meet my best friend and help her make her son’s 1st birthday cake and other pastries. Picture above was the 4-tier birthday cake with a Precious Moment figurine on top. We decided not to make our own figurine, since we also lack colors to do it as well as we also have some errands while we were there.

Also made Vanilla Cupcakes then topped with Fondant. This was placed on the Candy Bar we set-up on the event.

Of course, I don’t want people to miss the sugar cookies, really good for decorations on the Candy Bar, and a stand-out. It’s also good for giveaways if you don’t want the really common cupcakes.

Me and my best friend (Fillmemore) really set this up and I had fun doing it. I find it pretty and elegant. Candies are bought in Singapore and Indonesia.

I deeply apologize for not responding the past week, since this was the reason why I’m not able to cater to your orders. It’s a one of a kind opportunity for me and a challenge to work in another place (more like in another country), a test to challenge my competence and professionalism. So there! Disney Princess Cake, Vampires and more

Disney Princess Fondant Cake

Disney characters are one of the most challenging and difficult to work with. Knowing this, I’m always hesitant and do forewarn my clients that the characters will not look the same, but will try my best to look or at least make people identify which character is being presented on the cake, cupcake or cookie.

One time, I visited my aunt, and told me that she’ll order a cake, when I asked her what type of cake, she told me a Disney Princess cake, I was surprised and told her I’ll try my best to make it look like the real cake but I cannot copy the exact image since that would take eons to master. I even checked Google if they have demos or some sort of gumpaste images. But epic fail. I found none. Since my time is limited, she ordered it on Thursday, and wanted it on Saturday. So I decided to make it look like cute dolls, and do the dresses. My aunt wanted Aurora, Cinderella, Snow White, Belle and Ariel in it. I was satisfied with my work since you can identify which is which. Even my sisters and my dad (though not a Disney fan) knew who it is. So I was happy. Haha.

Vampire Fangs Sugar Cookies

I love these vampire fangs. I’m not into vampires or whatnot. But I just totally love this design. Anyway, my clients daughter had a Vampire themed birthday party so she ordered the fangs and a vampire face Vampire Face Sugar Cookies

I can’t draw well to save my life so I was kind of stressed out with this one. Thankfully, my client liked it. Haha. 🙂 Anyway it was pretty challenging for me, I can’t draw but I can mold shapes and characters.

Halloween is just around the corner so I decided to use my Halloween cookie cutters and show them what they look like. I know I made a list together with the other cookie cutters I have but I didn’t have visuals to give. So I kind of decided to make some of the themes one by one. 🙂

Halloween has been celebrated in almost everywhere. I’ve experienced my first Trick or Treat at my friend’s village. The second one is in the San Francisco. Funny thing is that even adults there loves trick or treat. I was the one who gives candy to them. Hoho.

My first taste of Pumpkin Pie topped with Whipped Cream. Yum.

It was a first as well to go to a Pumpkin Patch in Half-Moon Bay, then see kids and their parents pick up the best pumpkins at the patch. Eat warm Apple Pie with Vanilla Ice cream on top. Drool over Caramel Apples. Enjoy the cold, crisp of Autumn. Haha. Now I’m missing my second home.

The weather is getting cold now. I can finally feel the cold air around the city. Enjoy the upcoming Halloween. 🙂

Other Christmas Sugar Cookie Items

Chrismas Sugar Cookie Cupcakes

As promised, I’m gonna post up some of the designs that will be included in the Christmas Sugar Cookie package.

Above is a Christmas inspired Sugar Cookie Cupcakes. These are cookies that take the shape of a cupcake. This can be also made a party inspired cookie this can be used a whole year round.

Present Sugar Cookies

Just like the cupcakes, these present sugar cookies can be used all year round. But for now I decorated it in red, white and green to make it look Christmas-ey.

Christmas Wreath Sugar Cookies

I’m so glad that I found these cookie cutter when I was strolling around the mall. It’s one of the items I’ve been looking for so I’ve purchased it right away. It’s one of the things you shouldn’t miss during Christmas! The wreaths! 🙂

Party Hat Sugar Cookies

Just like the present and cupcake, these party hat is also available all year round and not only this season. I only added them so that you guys could have a variation. Those three items are also under the Party theme cookies together with the cake design. I’ll add other items either tomorrow or the day after.

Cream Puffs and Eclairs

Cream Puffs

Cream Puffs and Eclairs are both made from Choux pastry, Cabbage paste or in French, they’re called Pâte à choux (pronounced as pat-a-shu). Aside from puffs and eclairs the choux paste can be used for gougère (a savory version of puffs, filled with cheese or pate or other savory mousse. Other sweet variations are Paris Brest, Salambo, and Profiteroles

The filling consists of pastry cream or crème pâtissière (pronounced as krem patisier). Pastry cream is a cooked custard. Some other custards that is either steamed or baked in Baine-Marie (water bath) in an oven are Crème caramel (also known locally as Leche Flan), Crème brûlée, and Pot de Crème (pou-du-krem).

Eclairs

The difference between cream puffs and eclairs are puffs are dipped in a golden caramel glaze while eclairs are dipped in chocolate.
