Cream Puffs

Cream Puffs and Eclairs are both made from Choux pastry, Cabbage paste or in French, they’re called Pâte à choux (pronounced as pat-a-shu). Aside from puffs and eclairs the choux paste can be used for gougère (a savory version of puffs, filled with cheese or pate or other savory mousse. Other sweet variations are Paris Brest, Salambo, and Profiteroles

The filling consists of pastry cream or crème pâtissière (pronounced as krem patisier). Pastry cream is a cooked custard. Some other custards that is either steamed or baked in Baine-Marie (water bath) in an oven are Crème caramel (also known locally as Leche Flan), Crème brûlée, and Pot de Crème (pou-du-krem).

Eclairs

The difference between cream puffs and eclairs are puffs are dipped in a golden caramel glaze while eclairs are dipped in chocolate.

Both are available in 6’s and 12’s. For individual packaging, there’s an additional fee for the packaging. Box won’t be included if individually packed, and a minimum requirement of 12 pieces to order. Up to 2 different cookie design for 12 – 24 pieces.

Flavors are Chocolate, Gingerbread and Vanilla. Assortment of flavors is allowed.

Packaging for 6″ Gingerbread Man/Girl 6″ in 6’s and 12’s are different, it will be in a bigger box, all cookie packages include ribbon and a Christmas tag (see first photo).

Gingerbread Cookies

Gingerbread Man/Girl

I’m always curious when it comes to pastry. As much as possible, if ingredients are available and I can afford them, I’d try to make them at home.

Gingerbread cookies is one of the most popular cookies this coming Christmas Season. These cookies were usually given as gifts during the holidays. The most popular gingerbread cookies are the Gingerbread Man Cookies as seen on top. I tasted these cookies it’s not sweet I think the sweetness will come from the decorations, and the spices are not overpowering. It’s perfect for people who doesn’t like sweets so much.

The usual spices that are added on the cookie dough are cinnamon, nutmeg, cloves and ground ginger. But you can substitute allspice as well according to some recipes.

Before Icing the Gingerbread Cookies

Molasses are added to the dough to add color and texture. These cookies are crunchy as opposed to my vanilla and chocolate sugar cookies which are somewhat soft on the inside.

Christmas Bell and Stockings

I managed to buy the 101 cookie cutters which consists of halloween, christmas, etc. So I managed to make these Christmas cutters. Although I’m still looking for the reindeer, mittens, santa hat, snowflake and santa head cookie cutters which is kind of impossible since the suppliers here in my country aren’t buying all wilton products, only selected ones so it’s kind of sad. 😦
