Cheesecakes

Blueberry Cheesecake 9″

There are three types of cheesecakes I know so far, the traditional baked cheesecake, no-bake cheesecake and Japanese cheesecake.

Traditional Cheesecakes – these are baked in Baine-Marie (water bath). Eggs are the main component that binds the cake together (coagulation of proteins). This is the method that I use for my cheesecakes, it’s richer and creamier.

No-bake Cheesecakes – gelatin is used to bind the ingredients together, placing it in the refrigerator for a few hours will let it the gelatin set. This is a quick method, but I don’t really liked it, there’s a tendency (if you fail to bloom the gelatin well, or lack of gelatin) that the cake can collapse.

Japanese Cheesecake

Japanese Cheesecakes – baking method will be the same as traditional cheesecakes, but there’s meringue added in the batter to make it lighter and fluffier. The taste is different because of the lightness of the cake, but it’s still cheesecake and if you opt for a lighter one this cake will be the best option.

I sell two of these types which is Traditional Cheesecake and Japanese Cheesecake. 9″ and 6″ round cakes are the available sizes.

Cheesecake Cuppies

Cheesecake cuppies are also available in 12’s and 6’s (minimum order of 2 boxes if by 6’s).

Toppings (for traditional cheesecake and cheesecake cuppies only): Blueberry, Strawberry and Cherry.

The Precious Moments Project

Precious Moments themed Fondant Cake

A lot of you may have noticed that I’m not replying that much the past few days. The reason is I was out of the country, I went to Indonesia to meet my best friend and help her make her son’s 1st birthday cake and other pastries. Picture above was the 4-tier birthday cake with a Precious Moment figurine on top. We decided not to make our own figurine, since we also lack colors to do it as well as we also have some errands while we were there.

Also made Vanilla Cupcakes then topped with Fondant. This was placed on the Candy Bar we set-up on the event.

Of course, I don’t want people to miss the sugar cookies, really good for decorations on the Candy Bar, and a stand-out. It’s also good for giveaways if you don’t want the really common cupcakes.

Me and my best friend (Fillmemore) really set this up and I had fun doing it. I find it pretty and elegant. Candies are bought in Singapore and Indonesia.

I deeply apologize for not responding the past week, since this was the reason why I’m not able to cater to your orders. It’s a one of a kind opportunity for me and a challenge to work in another place (more like in another country), a test to challenge my competence and professionalism. So there! I hope you guys liked it! 🙂

Disney Princess Cake, Vampires and more

Disney Princess Fondant Cake

Disney characters are one of the most challenging and difficult to work with. Knowing this, I’m always hesitant and do forewarn my clients that the characters will not look the same, but will try my best to look or at least make people identify which character is being presented on the cake, cupcake or cookie.

One time, I visited my aunt, and told me that she’ll order a cake, when I asked her what type of cake, she told me a Disney Princess cake, I was surprised and told her I’ll try my best to make it look like the real cake but I cannot copy the exact image since that would take eons to master. I even checked Google if they have demos or some sort of gumpaste images. But epic fail. I found none. Since my time is limited, she ordered it on Thursday, and wanted it on Saturday. So I decided to make it look like cute dolls, and do the dresses. My aunt wanted Aurora, Cinderella, Snow White, Belle and Ariel in it. I was satisfied with my work since you can identify which is which. Even my sisters and my dad (though not a Disney fan) knew who it is. So I was happy. Haha.

Vampire Fangs Sugar Cookies

I love these vampire fangs. I’m not into vampires or whatnot. But I just totally love this design. Anyway, my clients daughter had a Vampire themed birthday party so she ordered the fangs and a vampire face Vampire Face Sugar Cookies

I can’t draw well to save my life so I was kind of stressed out with this one. Thankfully, my client liked it. Haha. 🙂 Anyway it was pretty challenging for me, I can’t draw but I can mold shapes and characters.

Rainbow Cake with Buttercream Frosting and Snow White Toppers

I made this last month. Before baking the cake, my oven thermostat broke. Thank God I stored the contact number of the technician and I smsed him immediately. He went the next day and fixed it the day after. I was afraid I won’t be able to make it on my customer’s deadline, but thankfully I was able to finish it on her desired date.

Aside from the oven, I had problems with the toppers as well some of the character topper’s icing became grainy and wouldn’t dry out, so I have to repeat almost all of them.

g this cake i was debating whether to bake each cake batter separately or just bake it all at the same time. I’ve decided though to bake it in two separate cake pans, 3 colors each.

Frosted Rainbow Cake

I usually don’t place the icing toppers the day before, the reason is when moisture reaches the icing, the icing bleeds and this results to ugly and soft watery toppers. I used to put letter toppers the day before together with the cupcakes and the results always been like that so from then on I always place the toppers before leaving the house that way, the toppers will maintain it’s crunch and bleeding won’t occur.

I have to say disney character toppers are the hardest toppers I have made so far. The eyes are important. I was kind of frustrated that I didn’t get Snow White’s eyes right, it’s just so hard, even if I drew them as a kid, I had a hard time drawing/sketching the eyes, mouth and hands. The dwarfs I kind of got the technique last minute hehe.

I think my favorite dwarf topper would be Grumpy, he looked like Grumpy and he’s so cute. :) I had fun making this cake although I have to overcome a lot of obstacles as I made this cake, it’s a fulfilling achivement. Now that I’m venturing slowing in making customized cakes, I’m in the midst of experimenting how to do fondant perfectly. It’s been a while since I’ve done fondant, (the last time I draped a cake was back in US, while I was in Cake class in California Culinary Acedemy) so please bear with me. 🙂

Customized Cakes

Dinosaur themed Carrot Cake with Buttercream Frosting

 

I apologize for the super long hiatus. 🙂

The reason for this is because… December came and my work has been piled up in double. Christmas season is the season where I get tons of orders. I rarely find time looking at my laptop. I’ll only check the things I need to do and then I’m off the kitchen. For 3 weeks I’ve been working around 7am until 11pm. Finishing orders, doing final touches for other orders.

A customer ordered this a few weeks back. I’m glad she liked it. 🙂 To tell you the truth, it’s been a while since I frosted some cakes. It’s one of the things I hate the most. Although it’s not perfectly frosted yet, you can see some visible lines, I’m on my way to making it look more decent.

I’m really ecstatic with this cake since it’s my first project cake and it is perfectly what I have envisioned. The side borders are piped in grass form to look like the dinos are really in a forest. 🙂

These are the feedback from my client:

“So beautiful. Tasted so good as well. I am so addicted to your cupcakes and cakes!”

“We almost didn’t eat it! Stared at it for several minutes – sobrang ganda! Hat’s off to you! And I don’t usually like carrot cake but was pleasantly surprised to find it so mouth watering, moist and rich. Sooo good!”

“Deneiza, it was sooooooooo goooooddd!! The frosting in between was yummy!! We love it!!! And your toppers, that was all over the cake, really cute!! 😀 We’ll be forever ordering from you!!”

Carrot Cake with Cream Cheese Frosting

I know I need to work on my rose buttercream. The last time I made those was when I was back in San Francisco, in my cakes class so I’m a bit rusty. But I’m working on it. 🙂

About the carrot cake — I used fresh and finest ingredients. That’s why you have to tell me 3 – 4 days in advance or more. Since I buy the carrots the day before I bake them and I use imported oil, a really really good one. (It’s a secret 😉 ) Cinnamon makes the carrot cake more sinful, it’s good both in cream cheese and buttercream and with nuts as well. 🙂

So what do you think? My next project will be next week, a Snow White themed Rainbow Cake with Buttercream Frosting. 🙂 I hope I get the eyes right. Since most Disney characters, you have to get their eyes right. Especially the princesses. 🙂  That’s all for now.
